劍橋飲食學會迎夏日    忙裡偷閒共享生活情

劍橋飲食學會又創新猶,特備名酒與佳茗迎夏日,在煩囂的都市生活中,忙裡偷來半日閒暇,共享生活情。特別於五月廿五日(星期一)下午六時至九時,假七號公路〝緣續園〞創意東方料理,舉行《夏日都市生活閒情派對》,備有各種新上市的酒類與眾同樂,另備香茗奉客品嚐。是日同時頒發由劍橋飲食學會舉辦之其中一獎項,由創業協進會〈ACCE贊助的【劍橋金寶創業獎】 (ACCE-Campbell’s Foodservice Award),頒予中國茶文化加拿大集團〈Chinese Tea Culture Canada Inc.。該獎項的精神,是嘉許機構在亞裔及非亞裔社區於創業方面有傑出表現者。

 

得獎機構,中國茶文化加拿大集團,由三位女士溫文、孔慶端及方余淑華創立。她們熱衷中國文化,醉心茶道藝術,因而將這份追慕之情,創設茶文化事業。在過去短短兩年多時間,活躍於不同族裔的社區內:包括應大多倫多中華文化中心邀請,連續兩年在安省遊樂場宮舉辦的中國彩燈節期間,開辦茶亭,進行中國茶藝示範。又應意大利社區《馬可孛羅之夜》示範中國茶藝;去年與猶太族裔社群以茶會友,舉行茶宴,進行文化交流;最近更以茶結緣,為病童醫院基金會一項研究嬰兒患有神經母細胞腫瘤籌募款項。自去年起參加荷頓市警察總部主辦之《亞裔文化月》活動之中國茶藝示範;其他如向大學及中學生,包括中、外媒體的電視及報章,介紹中國茶文化歷史及茶道藝術示範,積極在不同族裔的社區,推動中國茶文化活動,溶入她們對追求及保存祖裔文化藝術的熱忱。去年六月中國宣佈,功夫茶藝已被列入中國國家級〝非物質文化遺產〞名錄,今次中國茶文化加拿大集團獲獎,更能體現加國多元文化的特色,別具意義。

劍橋飲食學會(Cambridge Food & Wine Society),自一九八八年由陳籍強教授(Leo Chan)Professor Gian Paolo (J.P.) Michelini共同創辦,轉瞬間已踏入第二十一年。最初由一群喜愛鑽研飲食人士開始,慢慢發展為推廣飲食文化,並向在廚藝、釀酒及餐飲業服務方面有出色表現者頒發獎項,以表揚飲食從業員在業界的努力。劍橋飲食學會每年所舉辦的各項飲食活動已逐漸成為飲食界及社區一大盛事。而贊助機構,創業協進會(Association of Chinese Canadian Entrepreneurs),自一九九四年成立以來,其工作目標以鼓勵加國華商發展業務,協助投入國際市場,提供各項營商資訊、舉辦研討會、工作坊,積極探討及推動加拿大在亞太區的商機,同時亦擔任政府與創業人士間的橋樑,幫助華商在加國安居立業。

是次活動得到〝緣續園〞飲食連鎖集團提供場地及各精緻食品的贊助,各酒商大力支持,讓大眾享受一個愉快的夏日派對。

VinCambridge 2009 

This exclusive Cambridge Food and Wine Society event will be held at Oasi on Tuesday, May 5th.  It will feature a gourmet menu created by award-winning Chef Albino Silva of Chiado and Oasi and his partner Todd Clarmo, Chef at Oasi.   John Szabo, an associate of Oasi and Canada’s first and only Master Sommelier, will pair each of the delectable dishes with a fine selection of Portuguese wines and vintage port from Ramos Pinto.

Chef Albino Silva, who ranks as one of North America’s top chefs, has received five-star reviews for his highly acclaimed “Progressive Portuguese” cuisine for the past two decades. He was the youngest professional chef to instruct at the Culinary Institute of America (C.I.A.), Hyde Park, New York, the world’s premier culinary college.

Two prestigious awards will be presented to outstanding individuals from the international food and hospitality industry: the 2009 Riedel Wine Maker of the Year to Mr. João Nicolau de Almeida of Ramos Pinto, Portugal; and the 2009 Glenfiddich Chef of the Year to Executive Chef Louis Charest from the Office of the Governor General of Canada.

Her Excellency, Dr. Maria Amélia Paiva, Consul General of Portugal, is the Honourary Event Chair of 2009 VinCambridge. Dr. Robert Luck, Consul and Trade Commissioner of Austria, will present the Riedel Wine Maker of the Year Award. Mr. Tony Elenis, President, Ontario Restaurant, Hotel and Motel Association, will present the Glenfiddich Chef of the Year Award. Other honoured guests include Senator Dr. Vivienne Poy and Dr. Neville Poy, Mr. Dimitris Azemopoulos, Consul General of Greece.

葡萄美食獻新猶

劍橋飲食學會再作義舉

 

劍橋飲食學會(Cambridge Food & Wine Society)本年度以葡萄牙的美酒佳餚為活動主題的晚宴,日昨於加拿大一所著名的新食府Oasi Restaurant舉行。約在六時半開始,即由加拿大小交響樂團的絃樂四重奏,為晚宴譜出前奏曲,嘉賓耳聽著輕快柔美的古典音樂,另一面品嚐著各項精緻的前菜小吃。佐以由Louis Roederer 提供的香檳(Premier Brut)

 

是晚各菜餚均由去年【最佳名廚獎】(Glenfiddich Chef of the Year Award) 得主,亞賓勞史華(Albino Silva)自主理。同時由加拿大唯一一位世界級待酒大師,約翰沙寶(John Szabo)親自為每度佳餚配襯由葡萄牙著名酒廠Ramos Pinto精選釀製的紅、白佳釀。頭盆菜餚包括有鵝肝、野鴨肉及意大利巴馬省特產的燻腿,前菜為黃鯆魚魚鰭配以日內亞魚介汁,而主菜則為蒜蓉燒羊脊肉。

 

主菜結束後,與會嘉賓轉往另一餐房享用餐後甜品。今次得到德芙莉(Dufflet)DT Bistro匡助,設計多款甜品,再配以來自不同國家品種的芝士,將晚宴氣氛推至高潮。餐後酒以20年的葡萄牙砵酒(Tawny Port)為主打,另配有15年的蘇格蘭純麥威士忌及來自安省以Mike Weir為品牌2006年的冰酒。除餐後酒外,另有特製的蒸餾咖啡及由中國茶文化加拿大集團提供的數款不同味道的工藝花茶,以佐不同的甜食。

 

該晚之主廚亞賓勞史華,被評為北美最高榮譽名廚之一,其主理之菜餚,在過去廿年來,連續得到五星級榮譽獎項,一直執〝新進葡國菜式〞之牛耳;其一出道,即成為美國紐約烹飪中心(Culinary Institute of America(C.I.A.))最年輕烹飪教授。

該晚除飲食環節外,另有劍橋三項獎項頒發。首先由劍橋飲食學會創辦人之一,陳籍強教授致辭,除介紹是晚嘉賓,並宣佈該三項獎項情況,分別為【劍橋多元文化終身成就獎】(Cambridge Multiculturalism Lifetime Achievement Award) 追頒予加拿大已故總理杜魯多。而【最佳名釀獎】 ( Riedel Wine Maker of the Year Award ) 本年度得主為葡萄牙的Mr. João Nicolau de Almeida of Ramos Pinto由奧國總領使頒授; 另一項獎項則為【最佳名廚獎】(Glenfiddich Chef of the Year Award) 本屆得主為加拿大總督府之總廚,路易斯查域士(Executive Chef Louis Charest)由劍橋飲食學會會長張小如女士頒發。

而是晚出席嘉賓包括有參議員利德蕙博士及伍國權醫生伉儷,葡萄牙總領使瑪麗亞鮑華博士(Her Excellency, Dr. Maria Amélia Paiva)及夫婿,奧國總領使及希臘總領使。利參議員及鮑華博士均向嘉賓致辭,最後由林黃彩珍基金會主席陳林瑞玲女士作致謝詞,感謝劍橋飲食學會的支持及各與會嘉賓出席晚宴,玉成此一善舉。

Celebrating the 20th Anniversary

Toronto & GTA, ON - The Cambridge Food and Wine Society, an organization co-founded by Professor Chef Leo Chan and Professor Gian Paolo (J.P.) Michelini, celebrated its 20th anniversary at the 2008 VinCambridge Gala yesterday.

VinCambridge 2008 featured an exclusive celebration of food and wine at Via Allegro Ristorante, a five-star and top ten best restaurant in Toronto. A four-course gourmet menu was created by award-winning Chef Lino Collevecchio and featured a Duet of Tuna Carpaccio with Mango Tuna Tartare; Porcini Mushroom Agnolotti with Truffled Cheese Fondutta; Veal Mignon Saltimbocca with Lobster Crostata and Chorizo Polenta; and Passionfruit Cheese Torta. Each course was matched with wines from France and Italy selected and introduced by Wendy Votto, acclaimed as “Best sommelier in Toronto”. Restaurateur Felice Sabatino shared his experiences in developing a renowned wine and spirits collection that includes 100 selections of Château Mouton Rothschild from 1893; selections of Château Latour and Château d’Yquem from 1918; the best Amarone collection in the world; 400 selections from Piedmonte; 650 selections from Tuscany. Via Allegro is the only restaurant in the world to ever be awarded the two most prestigious international awards: The Grand Award from Wine Spectator magazine of New York for one of the best wine lists in the world and The Supreme Whisky Award from London, England, for the best Scotch list in the world (1,000 selections.) Among its other awards and accolades, Via Allegro attained the prestigious AAA/CAA Four Diamond Award and the DiRoNa (Distinguished Restaurants of North America) Award for outstanding food and service.

Monsieur Beyer hails from a family that has been growing wine in Alsace, France, since 1580. Léon Beyer wines have forged a worldwide reputation on wine menus of the finest restaurants in France and around the world.

The Cambridge Food and Wine Society has supported the Toronto Hispano-American Film Festival, Culinary Team Canada and charitable organizations, such Second Harvest, Scarborough Hospital Foundation and Villa Charities Foundation. Proceeds from the 2008 VinCambridge Gala will be directed to the Jean Lumb Foundation Scholarship Fund that recognizes the outstanding achievements of high school students of Chinese heritage. The 2008 Jean Lumb Awards Dinner will be held on Saturday, October 25, 2008, at Empire Legendary Restaurant, 3600 Victoria Park Avenue, Toronto, Ontario.

VinCambridge 2007 Award Dinner

On Monday, May 29th The Cambridge Food and Wine Society will be celebrating its 18th Annual VinCambridge Award Dinner at Humber Institute of Technology & Advanced Learning, 205 Humber College Blvd., Toronto. The celebration will begin with a champagne reception at 5:30 p.m., followed by an elegant dinner with a tasting menu at 7:00 p.m. ( $150/ person)

Celebrity chefs representing Ontario at the upcoming World Culinary Olympics at Luxembourg will be preparing an incredible meal.  The menu will be matched by an array of the finest wines from all over the world.  124 industry writers, professionals and food and wine enthusiasts will attend this unforgettable dinner.

This year, some of the Cambridge Award winners include Chef Albert Schnell, wine makers Karl Kaiser and Donald Ziraldo of Inniskillian and restaurateur James Chiu of Mandarin.

2006 Cambridge Lifetime Achievement Award

  • The 2006 Cambridge Lifetime Achievement Award recipient is David Crombie is a former Mayor of Toronto and Member of Parliament. He has also served as Federal Cabinet Minister and as Chancellor of Ryerson Polytechnic University in Toronto. He has received a Doctor of Laws (honoris causa) from the University of Toronto for his contribution to his native Toronto and a Doctor of Laws (honoris causa) from the University of Waterloo for his contribution to the quality of life of Canadians and the environment.  A member of many community organizations, he is President and CEO of the Canadian Urban Institute, the Founding Chair of the Waterfront Regeneration Trust and President of David Crombie & Associates Inc. He also serves as Chair of the Nuclear Waste Disposal Advisory Committee and is a Director of the Centre for the Financial Services OmbudsNetwork (CFSON). Recently he was appointed as Chair of the Ontario Place and an Officer to the Order of Canada.
